Arboretum

The surrounding lands are very fertile ones, as their are composed of alluvial soils. Hence, everything can grow under the Sun of Camargue. It made it possible to take good care of the park beholding 65 different essences of trees, some of them being several hundreds years of age. Sequoias run along eucalyptus, ginkgos, Siberian elms and various essences of cypresses, palmtrees and bamboos. Oleanders of several kinds, lilacs and strawberry trees bring colourful touches to the lands. The Chateau La Pompe is in the middle of the only garden à-la-française in Camargue, with fountains, bamboo bushes and drawn grass.

Unusual and marvelous presences

Several couples of peacocks coming from the Castle of Espeyran now live in Le Versadou and carry on the life of their species. Unusual and marvelous presences, their stand on branches of walk along the pools. These nuances of colorful sparkling birds bring a very special touche to the locality of the Mas, already blessed with 65 essences of trees.

Menu Médiéval (cuisine from Middle Age)

Once owned by the Abbey of Saint-Gilles, the land of Le Versadou has been known since 1209 as it was quoted in a charter of the abbey.
As such, the 800th years of existence of the domain were celebrated in 2009 around a delightful "Middle-Age Menu" (served only with a wooden spoon and a knife, no fork) we still present optionally during seminars and events.
This meal is also made of fresh products and mostly overseen or forgotten vegetables. It is served with a sample of Hypocras wines and ans salvia wines, following the traditions of these times.

Menu Romain

Located in the neighborhood of Arles and Nimes, the Versadou is undoubtedly an area of romanity. This is the reason why we remade private Roman bath, as this is also why we made it possible to order a "Menu Romain Découverte", for seminars or during local events.
Prepared exclusively with fresh products, after recipes of Apicius, and only with wares Romans already knew. Of course the meats were chosen among the most pleasant and original ones, though the Roman dish including tongues of pink flamingos didn't make our choice !
A sample of Roman wines is programmed, which come from the winemaking Mas des Tourelles, following an authentic reconstitution.
